This is a dish that takes very little preparation and once seared, you can leave it alone to cook slowly on the grill. It is very tender and juicy. Read More »
Lucy’s Turkey
Call me old fashioned, but there isn’t a better way to cook a turkey than the way Grandma did. Sure the cooking bag keeps it moist, but I’ve never had any complaints about my turkey being dry. I guarantee results.
Garlic-Mushroom Chicken
Summer veggies add a nice delight to this recipe and a great way to use some of that zucchini that keeps producing. And the coconut milk gives an interesting flavor to this dish and is quite fun to cook with. This dish takes a little prep time, but is well worth it.
Garlic/Lemon Grass Chicken
This has to be one of my absolute favorite chicken recipes. It is so moist and delicious I know you will agree with me. You can substitute dehydrated lemon grass if you have the long blades as you will need to remove at the end of cooking. The combined flavors of the Tarragon, Garlic, Celery and Lemon Grass will have you begging for more. Serve with a nice glass of Chardonnay to bring out the flavors.
Cashew Crusted Parmesan Chicken Salad
I like to get creative when it comes to summer salad dishes and adding chicken whether grilled or baked makes it even better. However, when you combine cashews with herbs and parmesan cheese you really have a dish to write home about. I highly recommend the micro greens, but any leafy lettuce will work.
Breakfast Enchiladas
This Mexican dish is a great way to use up that left over chicken or ham from a previous night’s meal. It doesn’t take long to prepare, but you must let it sit for up to 12 hours, so no procrastinating on this recipe. In the winter you can substitute the freshly chopped peppers and onions for dehydrated veggies and re-hydrate them. My Chili Mexican blend with the nice cumin flavor adds a taste you and your family won’t soon forget.
Baked/Grilled Chicken with Lemon Fish/Fowl Blend
Who doesn’t like a lemon flavor on their chicken? When using my Zesty Lemon Fish Fowl Blend along with Oregano you will have an interesting flavor for your chicken whether you roast or grill. Hope you like onions, there are a lot of them in this dish.
Baked Chicken with Carrots and Onions
Poultry is such a staple in our diet here on the farm and there isn’t anything better than adding a base of fresh carrots and onions. This dish is simplistic but delicious with a little olive oil and my Fried Chicken Sprinkle.
