Cream Cheese Frosting
A little sweet goes a long way and I am not one for too much frosting on my cakes, but I absolutely love a scrumptious cream cheese frosting. This simplistic recipe will top any pumpkin bars, zucchini or carrot cake that will have your guests asking for a second helping.
Ingredients:
1 3-oz package cream cheese – softened
1/3 cup butter or stick margarine – softened
1 teaspoon vanilla
2 cups powdered sugar
Instructions:
Beat cream cheese, butter and vanilla in medium bowl with electric mixer on low speed until smooth.
Gradually beat in powdered sugar, 1 cup at a time, on low speed until smooth and spreadable.
Use to frost Lucy’s Pumpkin Spice Bars.
Refrigerate.
